Chicken Caprese & Pasta


Ingredients:
Chicken Breasts
Mozzarella Cheese
Tomato
Salt and Pepper
Pasta
Pasta Sauce

Directions:
-Turn on stove to warm
-Put salt and pepper on both sides of chicken breasts then place on stove to grill
-Grill chicken for 8-10 minutes
-While the chicken is being grilled place the mozzarella cheese on top of chicken to melt
-Once that is done place tomato on top of the melted mozzarella

Prep Time: 15 minutes

Quinoa Salad with Edamame, Broccoli & Strawberries


Ingredients:
1/2 cup cooked quinoa
1/2 cup edamame
1/4 cup chopped broccoli
1/4 cup strawberries
2 tbsp dressing (I chose sesame ginger dressing)

Directions:
-Cook/boil quinoa & edamame
-Sautee broccoli
-Mix all together and add dressing

Cook Time: 10 minutes

Total Cost: $7

Broccoli Strawberry Salad


Ingredients:
2 cups broccoli
1 1/2 cups strawberries
1/4 cup of chopped cashews
2 tbsp toasted coconut 

For dressing:
2 tbsp greek yogurt
1 tbsp balsamic vinegar
2 tbsp honey

Directions:
-Combine ingredients for salad in medium bowl
- In small bowl, combine dressing ingredients
- Pour dressing over top of salad and mix well

Prep Time:10 minutes

Grilled Chicken & Roasted Red Pepper Panini


Ingredients:
Roasted Red Peppers
Chicken Breast
Balsamic Vinaigrette Dressing
Shredded Mozzarella Cheese
Whole Wheat Sandwich Thin

Directions:
-Preheat the oven to 350°
-Roast the red peppers for 30 minutes
-While waiting for the peppers to cook, grill the chicken
-Put mozzarella on top of chicken while grilling
-Put roasted red peppers on top of the cheese and chicken
-Toast the
-Put the grilled chicken, mozzarella and red peppers
-Add balsamic dressing to add more flavor

Salad Pizza


Ingredients:
Boboli Pizza Dough
Spinach Spring Mix
Cucumbers
Roasted Red Peppers
Ken’s Balsamic Vinaigrette

Directions:
-Preheat oven to 425°
-Cook the pizza dough for 10 minutes
-Add the spring mix, cucumbers, red peppers and whatever you like on your salad
-Pour salad dressing

Prep Time: 15 minutes

Spinach & Artichoke Dip


Ingredients:
1 cup parmesan cheese
1 (4 ½ ounce) box frozen chopped spinach, thawed
1 (6 ¼ ounce) can artichoke hearts, drain and chop
1/3 cup sour cream
1/2 cup cream cheese
1/4 cup mayonnaise
1 teaspoon garlic, minced

Directions:
-Preheat oven to 375°
-Mix together the parmesan cheese, spinach and artichoke hearts
-Combine sour cream, cream cheese, mayonnaise and garlic to the spinach mixture
-Bake for 25-30 minutes
-Let it cool for a few minutes
-Serve with crackers or tortilla chips

Turkey Avocado Burgers


Ingredients:
1/2 lb. ground turkey
1/2 large avocado
1/4 cup breadcrumbs
1/4 clove of garlic, chopped
salt and pepper to taste

Directions:
-Combine ingredients, being careful not to mush avocado
-Form into patties and grill until done

Stuffed Peppers


Ingredients:
1/2 lb. lean ground turkey1 can of black beans, rinsed and drained
3/4 c. corn
1 can of tomatoes, drained and rinsed
1 tbsp. garlic, minced
3 tbsp. chopped onion
2 tbsp. cilantro
3 tbsp. taco seasoning
2 bell peppers, cut in half lengthwise and cleaned*
1/3 c. chicken broth
Shredded cheese for garnish (We use Mozzarella!)(Makes 2 servings)

Directions:

-Cook ground turkey in large skillet
-After cooked, add onion, cilantro, garlic & tomatoes
-Simmer on low heat for 20 minutes
-Add corn, black beans & taco seasoning and let simmer for another 5 minutes
-To prepare peppers- cut out stem and seeds, and then cut them in half
-Fill peppers with turkey mixture
-Put chicken broth in oven safe dish, then place peppers in. Cook for 40 minutes
- Take out and sprinkle cheese on top. Cook for 5 more minutes to let melt

Prep Time:
25 minutes
+ 45 minute cook time

Turkey Burger with Salad & Veggies



Ingredients:
Quinoa
Lima Beans
Corn
Baby Romaine
Turkey Burger
Feta Cheese

Directions:
- Defrost turkey burger
- Boil quinoa in chicken broth for twenty minutes
- Cook turkey burger for ten minutes on stove
- Warm up lima beans and corn in microwave for four minutes
- Mix together baby romaine separately
- Add feta cheese & salad dressing of chose to baby romaine
- Mix the vegetables and quinoa together
- Put turkey burger with salad

Prep Time: 35 minutes

Cauliflower Pizza



Ingredients:
1 tbsp Basil
1 large head of Cauliflower
2 tbsp garlic powder
2 eggs
1 cup pizza sauce
3 cups mozzarella cheese

Optional: 
Oregano
Parmesan cheese
Chicken
Spinach
Mushrooms
Onions

Total Time: 30 minutes

Directions:
-In a food processor, shred the head of cauliflower
-Cook the cauliflower in the microwave for about 1 minute
-Mix in eggs, garlic powder, mozzarella cheese and any other italian seasoning you'd like
-Lightly grease a baking pan and make mixture into a crust
-Bake for 15 minutes until golden brown
-Top with anything you'd like!
- Bake for 5 more minutes or until cheese is melted

(Makes 2 8-inch pies)

Low Calorie Chicken Caesar Salad


Ingredients:
Chicken Breast
Baby Romaine
Cucumber
Celery
Croutons
Lite Creamy Caesar Dressing



Total Time: 20 minutes

Directions:
- Wash lettuce, once it is dry put into a large mixing bowl
- Mix in cucumber, celery and croutons into mixing bowl
- After grilling the chicken breast for ten minutes on the stove, add that to the mixing bowl
- Add the Lite Creamy Caesar dressing to the mixing bowl
- Lastly, mix all the ingredients together
