Apple Cinnamon Oatmeal Muffins
Ingredients:
1 1/2 cup oatmeal
1 1/4 cups whole wheat flour
1/2 cup brown sugar
1 tsp baking powder
3/4 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt
1 cup sugar-free applesauce
1/2 cup milk
3 tbsp canola oil
1/2 tsp vanilla extract
1 egg white
Topping:
1 tbs butter, melted
1/4 cup quick oats (or regular rolled oats)
1 tbs brown sugar
1/8 tsp ground cinnamon
Directions:
-Preheat oven to 400.
-In a large bowl combine the first seven ingredients (the dry ingredients).
-In another bowl combine the wet ingredients together.
-Stir wet ingredients into dry ingredients and mix slowly until just combined.
-Fill muffins tins or liners 3/4 full with batter.
-Combine the topping ingredients and sprinkle evenly over batter.
-Bake for 15-18 minutes

Ingredients:

1 cup plain yogurt
1 large egg
6 apples, sliced into rings
Canola Oil for Frying
1/2 cup sugar
1 to 2 teaspoons cinnamon
Directions:
-In a small mixing bowl combine flour, baking powder and salt. Set aside.
-In a separate bowl whisk together yogurt and 1 egg; whisk until well combined.
-Whisk yogurt mixture into flour mixture.
-Slice apples and using a round small cookie cutter, or a knife, cut “rings” out of the middle of the apple slices.
-In a skillet, heat the oil over medium-low heat.
-Dip the apple rings in the batter then place in the skillet and cook until golden. Flip them over to cook both sides evenly.
-In a bowl or plate combine sugar and cinnamon; mix well.
-Dip cooked apples in sugar mixture.
Prep Time: 10 minutes + 15 minutes cooking time
